Simple Oven Jerk Chicken Recipe

This is probably the simplest chicken recipe I know of, but also one of the best and most useful. I've used the shredded meat to make filling for baos for example, and it was a hit. It's modified from a recipe from Caribbean Pot.

Just take drumsticks, give them a cut or two, cover them in Jerk sauce (either one you made https://caribbeanpot.com/a-classic-jamaican-jerk-marinade/) or one you bought - I usually get Jamaican choice- then cook in the oven at ~375 until nice red and brown all over. Jerk sauce is very powerful, so if you give the chicken a few cuts you don't need to marinate the chicken at all. The brown bits are just jerk seasoning in which the sugar caramelized - not burnt bits - and taste great. Of course, for more flavor you can add more seasonings or make it pretty with cilantro at the end.
